Orange Creamsicle Cookies


I have been dreaming of these little guys ever since I made the first Cherry Cordials back in October.  And they turned out exactly like I expected.  Dave commented that they really did taste like an orange creamsicle with a lovely blend of orange cookie and white chocolate.  Don't let the pictures scare you--I'm terrible with my camera and couldn't figure out how to balance the light so the orange wasn't so intense.  They are actually much paler than they appear.

These bake up quick thanks to prepackaged mix and flavor from orange gelatin.  They'll be a great addition to your summer cook outs.  Sandwich two cookies together with a little vanilla ice cream, pop them in the freezer for 15 minutes and you've got a treat that everyone will be craving.



Orange Creamsicle Cookies


Ingredients

1 17.5 ounce package Betty Crocker Sugar Cookie Mix
1 package sugar free orange gelatin
1/2 cup butter, softened (called for on cookie mix)
1 egg (called for on cookie mix)
1 cup white chocolate baking chips

In a medium bowl, whisk together cookie mix and orange gelatin.



Add butter and egg and mix together.  Using a pastry blender, cut butter and egg into dry ingredients and mix until combined.  You may need to switch to a wooden spoon or add a splash of milk (no more than a Tablespoon).  Stir in white chocolate chips.




Using a small cookie scoop, drop onto a parchment or Silpat lined baking sheet about 2 inches apart.

Bake for 8 minutes in a 350 degree F oven.  Turn baking sheet 180 degrees halfway through. If using more than one sheet at a time, rotate positions in the oven for more even baking.


Remove from oven and cool on pans for 2 minutes before transferring to wire racks to cool completely.


Makes 4 dozen cookies.
